Honey Rosemary Baked Brie with Pecans

Description

Creamy oven-baked brie cheese appetizer or snack.

Makes 1-2 servings.

Ingredients

  • 3.5 oz brie
  • 1 Tbsp honey
  • 1 ½ cup pecans (coarsely chopped)
  • ¼ tsp dried rosemary
  • Sprinkle of freshly ground black pepper

Directions

  1. Preheat oven to 350° F.
  2. Place the brie (3.5 oz) in an oven-safe baking dish.
  3. Using a sharp knife, make vertical cuts into the brie about ½ inch apart. Then stuff the dried rosemary (¼ tsp) into the cuts.
    • Note: If using fresh rosemary instead of dried, strip the leaves off of one sprig and use that amount instead. (Alan this is for you.)
  4. Add 1-2 grinds of black pepper directly on top of the cheese.
  5. Arrange the chopped pecans (1 ½ cup) on top.
  6. Drizzle the honey (1 Tbsp) over the cheese, aiming to cover all the nuts.
  7. Bake for 8-10 mins on the middle rack, or until the brie is starting to ooze out of the rind.
    • Note: Check on the brie early before the it starts to ooze. Once the cheese starts melting, it can quickly become overdone and assume an almost liquid texture. For best results, you’ll need to move fast to remove the brie from the heat at the right time.
  8. Serve immediately with crackers or bread.
